Indian-Style Pork Curry Recipe

Indian food is like a mix of spices and textures, with every dish having its tale. Among all the delicious dishes, this pork curry is a favourite, combining tasty smells, spicy flavours, and of course juicy meat.

Ingredients:

  • 1 kg pork shoulder diced
  • 1/2 cup chopped onions
  • 3 garlic cloves, chopped
  • 1 inch fresh ginger, chopped
  • 1/2 teaspoon ground turmeric
  • 1 tablespoon ground coriander
  • 1 tablespoon garam masala
  • 1 teaspoon red chilli powder
  • 1/4 cup coconut slices (optional)
  • 1 1/2 cups water
  • Salt to taste
  • Vegetable oil

Instructions:

Heat vegetable oil in a large pot or pressure cooker over medium heat.

Add the onions and cook until softened about 5 minutes.

Add the garlic, ginger, turmeric, coriander, garam masala, and chilli powder. Cook for an additional minute, stirring constantly, to release the fragrance of the spices.

Add the pork and cook for a few minutes, stirring occasionally, until browned on all sides.

Add water, salt, and coconut slices (if using) to the pot. Bring to a boil.

Reduce heat to low, cover the pot, and simmer for about 1 hour, or until the pork is tender and cooked.

Once the pork is cooked, taste and adjust seasonings as needed.

Tips:

You can adjust the amount of chilli powder according to your liking.

Serve the curry with steamed rice, naan bread, or roti.

For a richer flavour, you can substitute coconut milk for some of the water.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
