Ingredients:
2 pounds of potatoes, halved
2 tablespoons olive oil
2 tablespoons minced fresh herbs (such as rosemary, thyme, and parsley)
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
Instructions:
Preheat the oven to 425°F (220°C).
In a large bowl, toss the halved baby potatoes with the olive oil, minced herbs, garlic, salt, and black pepper until well coated.
Transfer the seasoned potatoes to a large baking sheet and spread them out in a single layer.
Roast the potatoes in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy on the outside, and tender on the inside. Flip them halfway through the cooking time to ensure even browning.
