- 2 pound of potatoes
- 2 tbsp olive oil
- minced fresh herbs (such as rosemary, thyme, and parsley)
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
Preheat the oven to 425°F (220°C).
In a large bowl, toss the halved baby potatoes with the olive oil, minced herbs, garlic, salt, and black pepper until well coated.
Transfer the seasoned potatoes to a large baking sheet and spread them out in a single layer.
