Ingredients
  

  • 2 pound of potatoes
  • 2 tbsp  olive oil
  • minced fresh herbs (such as rosemary, thyme, and parsley)
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, toss the halved baby potatoes with the olive oil, minced herbs, garlic, salt, and black pepper until well coated.
  • Transfer the seasoned potatoes to a large baking sheet and spread them out in a single layer.
  • Roast the potatoes in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy on the outside, and tender on the inside. Flip them halfway through the cooking time to ensure even browning.
  • Remove the roasted potatoes from the oven and let them cool for a few minutes before serving.
