Lemon Loaf Recipe

If you’re craving a refreshing and zesty treat, look no further than a homemade lemon loaf. Bursting with tangy flavours and a moist texture, this delightful dessert is perfect for any occasion.

Ingredients

1 and 3/4 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

3 large eggs

1/2 cup milk

2 tablespoons fresh lemon juice

1 tablespoon lemon zest

1 teaspoon baking powder

1/2 teaspoon salt

Directions

Step 1: Preparing the Batter

Start by preheating your oven to 350°F (175°C) and greasing a loaf pan with butter or non-stick spray. In a mixing bowl, cream the softened butter and sugar together until light and fluffy. Then, add the eggs one at a time, beating well after each addition.

Step 2: Adding the Lemon Flavor

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter and sugar mixture, alternating with the milk. Stir until just combined, being careful not to overmix.

Next, add the lemon juice and lemon zest to the batter. The fresh citrus flavours will infuse the loaf with an invigorating taste. Mix gently until the ingredients are evenly distributed.

Step 3: Baking the Lemon Loaf

Pour the batter into the greased loaf pan, spreading it evenly. Place the pan in the preheated oven and bake for approximately 45-50 minutes, or until a toothpick inserted into the center comes out clean.

While the loaf is baking, your kitchen will be filled with the tantalizing aroma of lemon. Use this time to prepare a simple lemon glaze to enhance the flavour.

Step 4: Preparing the Lemon Glaze

Once the lemon loaf is out of the oven and slightly cooled, it’s time to add a finishing touch. In a small bowl, combine 2 tablespoons of fresh lemon juice and 1/2 cup of powdered sugar. Whisk until smooth.

Step 5: Adding the Finishing Touch

Using a toothpick or fork, poke several holes in the top of the loaf. Drizzle the lemon glaze over the warm loaf, allowing it to seep into the holes. The glaze will add an extra burst of tanginess and a sweet touch to every bite.

Serving and Storing

Allow the lemon loaf to cool completely before slicing. The flavours will meld together, providing a delightful taste experience. Serve a slice with a hot cup of tea or coffee, or enjoy it as a dessert after a satisfying meal.

To store the loaf, wrap it tightly in plastic wrap or place it in an airtight container. It can be stored at room temperature for up to three days or refrigerated for up to a week, ensuring you can savour the lemony goodness over several days.
